MIMI'S CAFE

Have you tried the Tomato-Basic Soup at Mimi's?
Holy crap, it's good.
So I decided, with the help of my sister-in-law Hailey,
to duplicate it.
Basically, lots of basil.
Lots of tomatoes.
Lots of pureed white beans (for thickness).
Some butter, whipping cream, sugar, and salt.
And red pepper flakes for a kick.
 Blended together, and brought to a boil.
 And frozen.
One jar at a time.
I've made about sixteen quarts,
and only have eight left.
HOW AM I GOING TO LAST ALL WINTER??

  2. sorry, i don't measure anything! but this is my sister-in-law's recipe i based it off of:
    4 tomatoes peeled
    4 cups tomato juice (i just put in whole tomatoes with their juice)
    18 basil leaves
    1 cup heavy whipping cream
    1/2 cup butter
    2-3 cans white beans
    1/4 cup sugar or to taste
    salt and pepper to taste
    (and i added red pepper flakes)
